Lacson Street in Bacólod City is one of the nicest places you can be in Bacólod City with nice restaurants lining up the street. My guest Dr. Richard Espeno, a Filipino physician based in Singapore, decided to stay close by. After I helped him find a nice hotel to check in, he asked which place would be nice to eat and close. Since he is tired from the day’s spent in Iloilo, we must just eat close by. A Chicken Inasal fix is a must try for every tourist coming to the City of Smiles so I took him to Chicken Deli. If you remember last year, I blogged about the then newly-opened Chicken Deli Branch in SM North EDSA but now we are heading to it’s mother restaurant just beside the Association of Negros Producers Showroom and close by the Provincial Capitol Lagoon.
While waiting for our order of isol, paa and pecho, Doc Chard asked me what makes Chicken Inasal special. I remember that my blog entry “Virtual Negrénses Talk Authentic Inasal” caused a word war between members of the From Bacólod online group and a number of “inferior inasal” fanatics. At the end of the day, the authentic and original Chicken Inasal is still best experienced in the city of it’s birth, Bacólod City. The secret of the best tasting authentic and original Chicken Inasal is not just a random mix of vinegar and soy sauce but ingredients carefully measured and passed down from generation to generation. What makes it special is the fact that Chicken Inasal in the city is not just considered another food item but a heritage everyone should take care.
As I said my last word in explaining about things Inasal up to making the sawsawan or dipping sauce, our order arrived. We were chomping down our order of isol when Doc Chard suddenly remembered to take a few snapshots of his authentic and original Chicken Inasal experience. We spoke not one word for Doc seems to be busy “analyzing” the flavors. After finishing his piece, Doc gave an approving smile and said “Ang sarap!” He told me that this is the best inasal he has ever tasted and I suddenly realized that nothing beats the experience of savoring the original and authentic. This heritage food of Bacólod City is steep with history which locals and tourists alike appreciates well. Even if “overly featured”, the Chicken Inasal experience will never get old.
